Cod with Tomatoes

Ingredients:

  • 4 cod fillets (fresh or thawed)

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes (or 2-3 fresh tomatoes, chopped)

  • 1 tbsp tomato paste (optional for a richer flavor)

  • 1 tsp dried oregano or Italian seasoning

  • 1 tsp fresh basil or parsley (optional)

  • Salt and pepper, to taste

  • Red pepper flakes (optional, for a bit of heat)

  • Juice of half a lemon (optional)

Instructions:

  1. Prepare the Cod: Pat the cod fillets dry with a paper towel and season both sides with salt and pepper.

  2. Cook the Cod: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the cod from the skillet and set aside on a plate.

  3. Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and garlic, and sauté for about 2-3 minutes until softened and fragrant.

  4. Make the Tomato Sauce: Add the diced tomatoes (with juices) and tomato paste to the skillet, stirring to combine.   5. Return the Cod to the Skillet: Gently place the cooked cod fillets back into the skillet, spooning some of the tomato sauce over the fish. Simmer for another 2-3 minutes to heat everything through and let the flavors combine.

  6. Finish the Dish: Remove the skillet from heat. Squeeze fresh lemon juice over the cod for a burst of brightness (optional). Sprinkle with fresh basil or parsley for extra flavor and color.
