Coffee cake
Coffee cake is a delicious, moist cake typically enjoyed with a cup of coffee or tea, often featuring a cinnamon-sugar swirl or crumble topping. It's perfect for breakfast, brunch, or an afternoon snack. Here's a simple recipe to make a classic coffee cake:
Ingredients:
For the Cake:
-
1 1/2 cups all-purpose flour
-
1 tsp baking powder
-
1/2 tsp baking soda
-
1/4 tsp salt
-
1/2 cup unsalted butter, softened
-
1 cup granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
1/2 cup sour cream (or Greek yogurt for a lighter option)
-
1/4 cup milk
For the Cinnamon Swirl:
-
1/2 cup brown sugar
-
1 tbsp ground cinnamon
For the Streusel Topping:
-
1/2 cup all-purpose flour
-
1/2 cup granulated sugar
-
1/4 cup cold unsalted butter, cut into small cubes
-
1/4 tsp ground cinnamon
-
Pinch of salt
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch round or square cake pan with butter or cooking spray and lightly flour it, or use parchment paper.
2. Prepare the Cinnamon Swirl:
In a small bowl, combine the brown sugar and ground cinnamon. Set aside.
3. Prepare the Streusel Topping:
In another bowl, mix the flour, sugar, cinnamon, and salt. Add the cold butter and, using your fingers or a pastry cutter, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside.
4. Make the Cake Batter:
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Add the dry ingredients alternately with the sour cream (or Greek yogurt) and milk, beginning and ending with the dry ingredients. Mix until just combined.
5. Layer the Cake:
-
Pour half of the batter into the prepared cake pan and spread it out evenly.
-
Sprinkle half of the cinnamon-sugar swirl mixture over the batter.
-
Add the remaining batter and spread it evenly over the swirl.
-
Sprinkle the remaining cinnamon-sugar swirl on top of the batter.
6. Add the Streusel Topping:
Evenly sprinkle the streusel topping over the cake batter.
7. Bake:
Bake the coffee cake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool and Serve:
Allow the coffee cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve with your favorite coffee or tea!
Enjoy the moist, cinnamon-infused flavor of this classic coffee cake—perfect for sharing or enjoying on your own!
