Coffee ice cream
Coffee ice cream is a rich and creamy treat with the bold, deep flavor of coffee. Making it at home allows you to control the sweetness and texture while enjoying a satisfying, homemade version. Here's a simple recipe to make coffee ice cream without an ice cream maker!
Ingredients:
-
2 cups heavy cream
-
1 cup whole milk
-
3/4 cup granulated sugar
-
1 1/2 tbsp instant coffee granules or espresso powder
-
5 large egg yolks
-
1 tsp vanilla extract
-
Pinch of salt
Instructions:
1. Prepare the Coffee Base:
-
In a medium saucepan, combine the heavy cream, milk, sugar, and instant coffee or espresso powder. Heat over medium heat, stirring occasionally, until the sugar and coffee granules dissolve completely and the mixture is hot (but not boiling). Once the mixture is hot, remove it from the heat.
2. Temper the Egg Yolks:
-
In a separate bowl, whisk the egg yolks and a pinch of salt together.
-
Slowly pour a small amount of the hot cream mixture into the egg yolks while whisking constantly to temper the eggs. Gradually add the rest of the hot mixture to the egg yolks, whisking continuously.
3. Cook the Custard:
-
Return the egg and cream mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon or heatproof spatula. Cook for about 5-7 minutes until the mixture thickens enough to coat the back of the spoon. Be careful not to let it boil.
4. Strain and Cool:
-
Once thickened, remove the custard from the heat and strain it through a fine-mesh sieve to remove any cooked egg bits.
-
Stir in the vanilla extract.
-
Let the custard cool to room temperature, then refrigerate it for at least 2-3 hours or until fully chilled.
5. Churn the Ice Cream:
-
Once the custard is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions. This typically takes 20-30 minutes.
6. Freeze and Serve:
-
After churning, transfer the ice cream to a container and freeze for at least 4 hours to firm up.
-
Serve in bowls or cones and enjoy the creamy, coffee-flavored treat!
Optional Add-ins:
-
Chocolate chips or chocolate shavings for a mocha flavor.
-
Crushed espresso beans for extra texture and coffee flavor.
-
Swirls of caramel or chocolate sauce for added richness.
Enjoy your homemade coffee ice cream for a refreshing, flavorful treat!
