Hot sour cake

Hot Sour Cake (Savory, Spicy, and Tangy)

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp chili powder (or more, depending on how spicy you want it)

  • 1 tsp ground ginger (optional, for a deeper flavor)

  • ½ cup sugar (balance the sourness and spice)

  • 1 cup plain yogurt (adds tanginess)

  • 1 egg

  • ¼ cup vegetable oil or melted butter

  • 2-3 tbsp lime juice (or vinegar for a sharper sourness)

  • 1 tbsp hot sauce (adjust based on preferred spice level)

  • ½ cup finely chopped fresh cilantro (optional, for freshness)

  • Salt to taste

For the Hot Sour Syrup:

  • 2 tbsp sugar

  • 2 tbsp lime juice

  • 1 tbsp water

  • 1 tsp chili flakes or fresh minced chili

  • A pinch of salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a baking pan (preferably an 8x8 square or a round cake pan).

  2. Prepare the Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, chili powder, ground ginger, and a pinch of salt.

  3. Mix Wet Ingredients: In another bowl, beat the egg and mix with yogurt, sugar, lime juice, hot sauce, and vegetable oil. Stir until smooth.

  4. Combine: Gradually add the wet mixture to the dry ingredients. Stir just until combined. If you’re adding cilantro, fold it in now.

  5. Bake: Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.

  6. Prepare Hot Sour Syrup: While the cake is baking, combine all the syrup ingredients in a small saucepan over medium heat. Stir until the sugar dissolves and the syrup thickens slightly, about 5 minutes.

  7. Cool and Glaze: Let the cake cool slightly. Once cooled, poke small holes in the top of the cake with a toothpick or fork. Pour the hot sour syrup over the cake, allowing it to seep into the holes.

  8. Serve: Serve warm for a spicy, tangy, and sweet treat. It pairs nicely with a cooling yogurt or a side of fresh herbs like cilantro.
