Potato milanaise
"Potato Milanaise" (or Pommes de Terre à la Milanaise) is a classic French or Italian-inspired potato dish, often featuring sliced or layered potatoes that are baked with cheese, butter, and sometimes breadcrumbs, resembling a gratin with a golden, crispy top. It’s rich, comforting, and makes a fantastic side dish.
Here’s a basic recipe:
Potato Milanaise (Pommes de Terre à la Milanaise)
Ingredients:
-
2 lbs (900 g) potatoes (Yukon Gold or similar), peeled and thinly sliced
-
2 tbsp butter (plus extra for greasing)
-
1/2 cup grated Parmesan cheese
-
1/2 cup grated Gruyère (optional, for richness)
-
1/4 cup breadcrumbs
-
1 garlic clove, halved
-
Salt and pepper to taste
-
Optional: A little milk or stock to moisten
Instructions:
-
Prep the dish: Rub the inside of a baking dish with the garlic halves, then grease with butter.
-
Layer the potatoes: Arrange a layer of thinly sliced potatoes in the dish. Season lightly with salt and pepper, then sprinkle a bit of Parmesan and Gruyère.
-
Repeat: Continue layering until all potatoes and cheese are used up. Finish with cheese and a good sprinkle of breadcrumbs on top.
-
Add moisture (optional): Pour a small amount of milk or stock (about 1/4 cup) over the potatoes for extra creaminess.
-
Top with butter: Dot the top with butter.
-
Bake: Cover with foil and bake in a preheated oven at 375°F (190°C) for 30 minutes. Then uncover and bake for another 20–25 minutes, or until golden and crispy on top.
-
Serve: Let it rest for a few minutes before serving.
