Saltfish and Potato Cakes

Ingredients:

1 lb salt cod (soaked overnight to remove excess salt)

2 large potatoes, peeled and boiled

1 small onion, finely chopped

1-2 cloves garlic, minced

1 small bell pepper, finely chopped

1-2 tbsp fresh parsley or thyme, chopped

1 egg (optional for binding)

Salt and pepper to taste

Instructions:

Prepare the Salt Cod: Once the salt cod has been soaked, rinse it well to remove excess salt. Boil it in water for about 10-15 minutes until it's cooked through. Then, flake the fish into small pieces, removing any bones.

Mash the Potatoes: Once the potatoes are boiled and soft, mash them until smooth. Set aside.

Sauté the Vegetables: In a pan, heat a little olive oil and sauté the onion, garlic, and bell pepper until soft and fragrant, about 3-5 minutes.
